Ingredients

  • 3 squash, large (or zucchini)

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon lemon juice

  • 4 tablespoons extra-virgin olive oil

  • 1/2 garlic clove, grated (optional)
  • 1 teaspoon parsley, finely chopped
  • 1 teaspoon dill, finely chopped
  • 1 teaspoon mint, finely chopped
  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

  • ¼ cup bread crumbs

  • ¼ cup Parmesan cheese
  • ½ teaspoon salt

  • ¼ teaspoon pepper flakes

Directions

    1. In a mixing bowl whisk the lemon juice, olive oil, garlic, herbs, salt, and pepper and to combine. Set aside.

    1. In another bowl, combine the breadcrumbs with the Parmesan, salt, and red pepper flakes. Set aside.

    2. Slice the squash into circles and heat the olive oil in a non-stick pan. Sauté the slices for 2 minutes on each side and continue the same process until all the squash is sautéed.

    3. Arrange on a serving plate and drizzle with the herbed oil. Top with the breadcrumb mixture and serve warm.
