Ingredients

    • 1 cup extra-virgin olive oil

    • 1/4 cup fresh rosemary leaves (stripped off of any woody stems)

    • 2 1/2 oz dry gin

    • 1/2 oz dry vermouth
    • 1 bar spoon olive juice
    • 3-4 drops rosemary olive oil 

    • Olives to garnish- optional

    Directions

      1. Place the olive oil and rosemary in a heavy bottomed pan. Heat over very low heat for 5 minutes without simmering. Turn the heat off and let it infuse for 60 minutes. Pour into a clean, air-tight container and store in the refrigerator for up to six months.

      1. Add ice to the drinking glass you to chill it. In a mixer glass, pour the gin, vermouth, and olive juice. Add 2-3 ice cubes and stir to mix well. Remove and discard the ice. Strain the martini into the chilled glass. Finish with a few drops of the infused oil. Optionally garnish with an olive.
