Ingredients

  • 2 plantains

  • 3 red peppers
  • 1 onion, red, large
  • 1 cup tomato puree
  • 2 zucchinis
  • 2 cups spinach leaves, fresh
  • 2 tbs flaxseed, ground
  • 4 tbs olive oil 

  • 1 tsp paprika
  • 1/2 tsp salt

  • 1/4 tsp black pepper

Directions

  1. Preheat the oven to 375°F.

  2. Thinly slice the plantains, peppers, onions, and zucchinis. Place in a baking pan, season with salt, pepper, and paprika.

  3. Add the tomato sauce, sprinkle with flaxseed, drizzle with olive oil and bake in the oven for 30 minutes until tender.

  4. Serve hot.
