Ingredients
- 2 zucchinis, large, diced
- 1 cup vegetable broth
- 1/2 cup white wine
- 1 onion, yellow, finely chopped
- 1 cup basil leaves
- 3 cloves garlic, minced

4 tsp olive oil

1 tsp sea salt
- 1 tsp lemon pepper
Optional to garnish:

4 tbs cream or Greek yogurt thinned with an equal amount of water.
Directions
Heat the olive oil in a saucepan and sauté the zucchinis with the onions for 10 minutes, seasoning with salt. Add the garlic and stir, allowing to soften for a minute.
- Add the wine and cook for 5 minutes, over high heat. Add the broth and simmer 10-15 minutes, adding water if needed. Add the basil and stir.
- Puree the soup with a stick blender and allow to simmer for 5 more minutes.
- Serve the soup hot, topped with a generous amount of lemon pepper and optionally with a swirl of cream/yoghurt.
