Ingredients
- 1 egg, whole
- 1 tbs freshly squeezed lemon juice
- 1 tbs warm water
- 1 tsp Dijon mustard
- 1 tbs Miso paste

1 cup olive oil

1/2 tsp salt
Directions
Beat the egg in a blender or food processor for 30 seconds on its own. A stick blender would also work. Add the lemon juice, water, mustard and process for 30 more seconds. Gradually pour in the olive oil a few drops at a time while blending until the mixture is emulsified into a thick mayonnaise.
- Add the miso paste and whisk well to incorporate.
- Store in an airtight container, in the fridge for up to 10 days.
