Hey everyone! It's summer, and that means its time to talk about one of my all-time favorite recipes - Marinated Mushroom Pasta Salad. This creamy and filling salad is packed full of flavor, perfect as a side dish during barbecue season or as a light lunch during those hot summer days. Not only is it delicious, this recipe is also incredibly easy-to-follow, making it perfect for busy weeknight meals or laidback weekend lunches. So, get ready to be seduced by the incredible flavors of this tasty marinade - I guarantee you won't regret it!

Ingredients

  • 2 cups bow tie pasta, cooked
  • 1/2 cup olives, black
  • 1/2 cup red peppers, roasted, chopped
  • 1 tbs dill, chopped
  • 1 tbs parsley, chopped 
  • 1/2 tbs salt

  • 1/4 tbs pepper, black

  • 2 cups mushrooms, champignon, small, halved
  • 1/4 cup  olive oil 

  • 2 tbs balsamic vinegar
  • 1 garlic clove, minced
  • 1 tsp honey
  • 1 tsp thyme

Directions

  1. Heat 1/4 cup of olive oil in a saucepan over low heat and add the garlic, honey and thyme. Allow them to steep for 2 minutes them pour over the mushrooms and let them marinate for 10 minutes.

  2. In the meantime, in a salad bowl combine the bow tie pasta with the olives, red roasted peppers, dill and parsley. Season with salt and pepper.

  3. Add the mushrooms and mix to incorporate the flavors.  Serve at room temperature.
