Ingredients

  • 3 potatoes, medium sized, peeled, quartered
  • 6 cloves garlic, minced
  • 1/2 cup parsley, chopped 
  • 5 tbs olive oil

  • 2 tbs vinegar
  • 1 tsp salt

  • 1/4 tsp white pepper

Directions

  1. Boil the potatoes for about 20-25 minutes until tender. Mash the potatoes with a potato masher or in a blender.

  2. Fold in the garlic and parsley.
  3. Add the olive oil and vinegar in a stream.

  4. Season to taste with salt and white pepper. Store in the fridge for up to 4 days and serve at room temperature.
