Ingredients

  • 1 cup broccoli, cut into florets

  • 1 cup ramen noodles

  • 1 tbs parsley leaves to garnish

  • 7 oz butternut squash, sliced 1 inch thick
  • 2 tbs olive oil   

  • 2 tbs honey 
  • 2 tbs soy sauce

  • 2 cups vegetable broth
  • 2 tbs olive oil

  • 1 garlic clove, minced
  • 1/2 tsp ginger, minced
  • 1 tsp salt 

  • 1/2 tsp pepper, black

Directions

    1. Heat the olive oil in a non-stick pan and sauté the squash slices for 3-4 minutes on each side. Add the honey and soy sauce to the skillet and toss to coat the slices. Simmer to reduce into a thick glossy paste to caramelize the squash.

    1. Heat the olive oil in a sauce pan and sauté the garlic with the ginger for 2-3 minutes. Season with salt and pepper and add the broth. Simmer for 5 minutes.

    2. Bring a pot of salted water to a boil and cook the broccoli florets for 5 minutes. Remove and cook the ramen noodles in the same water. Strain and set aside.

    3. Add half the amount of the caramelized squash into the broth and process with a stick blender until smooth and creamy.

    1. Divide the broth into serving bowls. Add the ramen and broccoli. Top with the remaining squash slices and sprinkle with parsley leaves, Serve hot.
