Ingredients

½ cup blue cheese
- 1 cup Greek yogurt
- 1 medium sized onion
- 1 tablespoon brown sugar

¼ cup extra virgin olive oil

¼ teaspoon salt

¼ teaspoon black pepper
Directions
Finely chop the onion and heat one tablespoon of the oil in a wide, non-stick pan. Sauté the onions for 3-5 minutes and add the sugar. Stir to coat the onions, season with salt and pepper, and let them caramelize for 1-2 minutes over medium to high heat. Set aside.
Whisk the rest of the olive oil with the Greek yogurt. Add the caramelized onions and crumble in the blue cheese. Whisk to combine.
