Our modern iteration combines crisp gin, sweet vermouth and sage syrup along with briny olives to create a complex combination of flavors that is sure to delight. Ingredients

2 oz. olive oil Gin*

¼ oz. extra dry Italian vermouth

4-5 Sage leaves

3 drops pink salt solution*

Green olives (optional)

Additional sage (optional)
Directions
The Olive Oil Gin:
Mix 100ml of olive oil and 500ml high quality gin
Stir and let infuse overnight at room temperature.
Pour into a freezer-safe container and freeze for 3-4 hours to solidify the oil.
Remove the olive oil fat and discard. Strain using a cheese cloth for a coffee filter. Pour in a bottle.
The Pink Salt Mix:
Mix 1 tsp Himalayan salt and 1 tsp water.
Sage Olive Martini:
Crush the sage leaves into a mixing glass with a muddler.
Pour in the prepared olive oil gin, vermouth, 3 drops of the salt solution, and some ice. Stir
