Zucchini Tomato Casserole

INGREDIENTS:

 

• 4 cups zucchini, chopped

• 1 cup crushed tomatoes

• 3 eggs

• 1⁄2 cup feta cheese,

crumbled

• 1⁄4 cup onion, chopped

• 1 garlic clove, minced

• 1⁄4 cup olive oil

• 1⁄4 tsp Provencal spices

(savory spices)

• 1⁄2 tsp salt

• 1⁄2 tsp pepper

 

DIRECTIONS:

 

1. Preheat oven to 350 F.

2. Heat half the olive oil in a pan and sauté the zucchini and onions, seasoning with salt and pepper, for 5-7 min. Add minced garlic and cook for another 1-2 min.

3. Transfer into a deep oven-safe pot or divide into single serving oven-safe pots.

4. Whisk together the eggs with crushed tomatoes.

5. Pour the mixture over the zucchinis, drizzle with remaining olive oil and top with feta cheese

6. Bake for 20-25 mins. Sprinkle savory spices on top and enjoy!
