INGREDIENTS:
• 2 cups goat cheese
• 2 quince, large, cut in small
wedges
• 1⁄2 cup wine vinegar
• 1 tbs honey
• 1 cinnamon quill
• 2 bay leaves
• 1 tsp thyme, dried
• 1/4 cup olive oil
DIRECTIONS:
1. In a saucepan add the vinegar, honey, cinnamon, bay leaves and quince. Cover with boiling water and keep simmering for 20 minutes or until the liquid is reduced to a glossy, thick sauce.
2. Mix the cheese with the olive oil and thyme. Place in a mold or bowl and press down with the back of a spoon.
3. Turn out onto a plate, top with the poached quince and serve at room temperature.
